Since I'm gluten free, the mashed potato flakes are used as a binder instead of bread crumbs. I hope you like! It's my go to when the local farmers market has squash. Don't be afraid to doctor and improvise as needed. Squash and onions are hearty and forgiving. Maybe try mixing in cheese? Maybe baking would be yummy? If you're not GF, maybe a sub bread crumbs for the potato flakes?
